The training videos show an option to begin to explore with CSV files. The platform doesn't show this as an option (at least not that I can see). Has this been deprecated? Maybe I'm just not finding it.

Hi Henry! Which training videos do you mean? Would you mind linking them over so I can check? Are you working with GoodData Cloud or GoodData platform? In GoodData Cloud, you can find an option for using some Demo data in the Homepage > Getting Started section. That will create a demo workspace with some data for you to use. As for Platform, in the article Import CSV Files into a GoodData Workspace you can find a couple of CSVs with some demo data that you can import to your workspace to use too. Please let me know if any of those help!
